One of the most interesting ways to spend a Saturday morning is talking to a farmer who is an expert on the crops he grows (and often grows rare varieties for love).
Maris Piper: Has purple-yellow flowers and a moist white flesh. Very vigorous in growth. Makes excellent chips.
Desiree: Mauve flowers with yellowy centres. Resistant to blight. The skin is red, and the flesh is yellow.
Whites: White flowers. Cream-coloured skin. Floury texture with a very good flavour.
Cara: White flowers and small glossy leaves. The plant is tall. Best for boiling.
Jersey Royals: The ones you get in the supermarkets are immature. Firm and waxy. Connoisseurs claim they can tell Jersey Royals from Jersey (better flavour) to Jersey Royals grown off the island.
Yetholm gypsy: Flowers pale purple with green centres. Tubers can have dramatic red, white and purple patches. They disintegrate if you don’t boil them carefully.
Pink Fir Apple: White flower with yellow centres. The tubers are very small, and therefore difficult to peel. Best to fry them in olive oil.
